💔Falls apart / crumbly

Crumbling is almost always a binding agent problem. Gluten-free flours lack the protein network that holds wheat baked goods together. The fix depends on your flour type: almond flour needs more binder than rice blends, and coconut flour needs the most of all.

🧱Dense or gummy inside

Dense or gummy interiors happen for two different reasons depending on timing. If it was dense straight out of the oven, the flour-to-liquid ratio is off or leavening was insufficient. If it was fine hot but got gummy after cooling, you cut it too early. Gluten-free bread needs at least an hour on a wire rack for the starches to finish setting.

🫓Flat; didn't hold shape

Gluten-free cookies spread and bread stays flat when the batter lacks structural support. Resting the batter for 30 minutes before baking lets binders hydrate and thicken. For bread, the issue is usually under-proofing. Gluten-free dough needs 60–90 minutes and won't double like wheat dough. Look for a 50% volume increase instead.

📉Didn't rise (bread)

Gluten-free bread that doesn't rise is usually a yeast or proofing issue. Yeast must be proofed in 110°F water until foamy before adding to the dough. Skip this and you're guessing whether it's alive. If using baking powder/soda only, gluten-free flours need 25% more leavening than wheat recipes, and your baking powder may be expired.

🏜️Too dry or crumbly-dry

Dryness in gluten-free baking is most often a measurement problem. Gluten-free flour density varies enormously: a cup of coconut flour weighs 112g while rice flour weighs 148g. Scooping cups packs 20–30% extra flour. Switching to a kitchen scale and weighing in grams eliminates this variability entirely.

🔥Burns outside, raw inside

Burning outside while staying raw inside is a temperature problem, often amplified by dark pans. Dark nonstick pans absorb heat faster and concentrate it on the crust. The fix: reduce oven temp by 25°F, switch to light-colored pans, and use an instant-read thermometer (gluten-free bread is done at 200°F internal) instead of relying on visual cues.

🍞Sticks to the pan

Gluten-free baked goods are inherently stickier than wheat because the starch structure is weaker and more fragile. Greasing alone isn't enough. Always line pans with parchment paper AND grease on top of the parchment. For bread specifically, let parchment hang over the edges as handles for lifting out the loaf. Silicone pans eliminate sticking entirely.

🌾Grainy or gritty texture

Grittiness is a flour texture issue, not a technique problem. White rice flour is the grittiest common gluten-free flour. Switching to superfine-ground rice flour or replacing 20–30% with tapioca starch dramatically smooths the texture. Resting the batter 30 minutes also helps as flour particles fully hydrate and soften.

💧Wet or dense bottom layer

A wet or dense bottom layer is almost always a heat or cooling issue, not a recipe problem. The bottom of a gluten-free loaf needs direct heat to set properly, and it must cool elevated on a wire rack, never on a flat surface. If the bottom was wet coming out of the oven, the bread needed 10-15 more minutes at temperature.

💥Burst or split out the side

Bread that bursts out the side of the pan has run out of room to expand upward. Fill pans only 2/3 full; gluten-free batters rise significantly in the oven. If the pan was correctly filled, reduce oven temperature by 25°F. A very hot oven sets the top crust before the interior finishes expanding, forcing the rise sideways.
